Start your day with a sip of sunshine! We got this recipe from a friendly ruffian down at The Snuggly Duckling in the kingdom of Corona. This mimosa inspired mocktail has bold citrus flavors and is light and refreshing. This drink features our Drop of Sunlight green tea that is bursting with Rapunzel-yellow fruits of pineapple and lemon. And if you want to brunch it up, you can easily swap out the sparkling water for sparkling wine.
Ingredients:
- ½ cup brewed Drop of Sunlight made with 2 tsp tea and sweetened as desired
- splash of lemon juice
- ½ cup orange juice
- ¼ cup of Sparkling water
- tall glass with crushed ice
Brew up a small cup of our Drop of Sunlight tea using 2 tsp of leaves and ½ cup of hot water. While the tea is still hot, stir in your choice of sweetener so it dissolves nicely. And then stir in the splash of lemon juice.
Wait a couple minutes for the tea to cool slightly. It is ok for it to still be warm, but if it is too hot, the ice will melt too quickly.
In the tall glass of crushed ice, pour in your sweetened Drop of Sunlight with lemon, then pour in the orange juice and top off with the sparkling water. The amounts are approximate but generally, you want about equal parts tea to juice and just a splash of sparkling water. Dress it up with a slice of lemon, sip, and relax.
